Winter warmer Corned Beef Hash
Traditional home cooked food on the beach - what could be better than my Corned Beef Hash served with lovely artisan bread. So simple but I guarantee when you come out of the water after a great days surfing this will be the " icing on the cake" Try it , its fantastically delicious.
Ingredients
6 largish pototoes ( what you would use for jacket potatoes), peeled and chopped in to bite size chunks
4 carrots , chopped - no need to peel
Handful of chopped french beans or similar
1 onion chopped - or 1 bag of ready chopped onions- Dont forget we are cooking in a camper- cheating is acceptable!
1 beef oxo / stock cube
1 tin of own brand corned beef- chopped into bite sized chunks
2 pints of water
Glug of oil
Method
In a large pan pour in the oil and lightly fry the onions for about 2 mins until nice and shiny but not burnt!
Add the chopped veg and fry again for about 3 mins
*** at this point tell the gathering crowd to go cook their own food- the aroma now coming from your van is divine!!***
Add the corned beef, stock cube and water
Cover and cook for about 30 mins until a lot of the water has been absorbed by the veg and the potatoes are light and fluffy - falling to bits even.
Serve with a nice bottle of "Brown sauce" , artisan crusty bread and a bottle of you favourite tipple!
