Thai Ginger and chicken Satay with Chilli Noodles
This is one of the recipes shown at the Cooking in a Camper “Masterclass” at the Volksworld Show in Esher a couple of years ago.I was very lucky to have the support of Just Kampers (www.justkampers.com) who provided the 2 ring burner, work station and table
Originally when I experimented with this recipe it was called "Penmaenmawr Thai chicken and ginger satay with Chilli noodles!!" but such a long name so we changed it to :-
Thai Ginger Chicken Satay with chilli Noodles
4 pieces of Chicken (ideally chicken breasts)
Medium piece of ginger, peeled and finely diced
3 garlic cloves peeled and diced
Spring onions (optional) – chopped
1 tablespoon of sugar
1 good glug of stir fry oil
6 tablespoons of soy sauce
½ cup of water
2 Teaspoons of Peanut butter (more if you fancy a more “peanutty taste!
Cooked noodles
Lazy chilli (available from most supermarkets – next to the lazy Garlic!)
I always use a decent sized wok to cook this meal in. A wok is a very versatile pan; buy the best you can, it really is essential to have decent pans and utensils, false economy to buy cheap and nasty!
Method
Dissolve the sugar in a decent glug of oil on your burner
Add the diced ginger, garlic and optional spring onions
Cook gently for approx 2 minutes
Add the diced chicken and cook for a further 10 minutes.
Whilst the chicken is cooking, combine the water, peanut butter
and soy sauce in a bowl, keep checking the chicken!
Now, add the water, soy sauce and peanut butter to the chicken.
If you feel it is a bit too thick add more water or if you feel you fancy a bit more peanut taste add another spoonful.
Place lid on the wok and cook a further 5 minutes until the chicken is cooked thoroughly.
Place the cooked noodles in a bowl and add 2 tablespoons of the lazy Chilli mix together and then place in the wok with the chicken mixture.
Cook for approx 2 minutes until the noodles are warmed through.
Serve! And of course enjoy.
