Surfers Mess Glory

Often people say " the curry etc was beautiful in the van but I really fancied something sweet"
I always struggled with this as I am not a dessert person and so its not really my forte! However Princess does like a nice pudding every so often and her favourite is Eton Mess closely followed by Knickerbocker Glory!!
So here goes my take on that.
Surfers mess Glory!! ( Serves 4)



Ingredients
4 ready made meringue nests ( M&S do some really rather goey ones - delicious)
1/2 punnet of strawberrys or Blackberrys from the hedgerows!OR any fruit you have - even tinned fruit salad is lovely in this recipe! Small tub of Welsh Ice cream - we love Parisella's from Conwy! Chocolate drizzling sauce ( optional)
4 Large wine glasses - not a problem in our household or rather "vanhold"

Method
Chop the fruit ( or open the tin!) into bite sized pieces Place a good spoon full at the base of the glass
Next add a layer of broken meringue
Now a layer of ice cream repeat the process till the glass is full Add a strawberry on the top for decoration and drizzle the chocolate sauce if you so desire!
Now , get your deck chair and find a beautiful location to sit, enjoy the view and of course the pudding!
