Saturday night take away!
Picture this- in the Van on one of our beautiful campsites over looking the sea. Only amenities are toilets and the view! Fancy a take away - then try this. No need to drive miles looking for a Chinese!
Sweet n sour Chicken with special fried rice
Like all of my recipes they can be prepared in advance or use little cheats to make life easier!
Ingredients
( serves 4)
4 skinless chicken fillets cut in to bite sized pieces
1 medium onion or 2 small - cut into chunks
3 peppers - in chunks
15oz can of pineapple chunks or rings -cut into chunks
2 garlic cloves or 1 tbsp of lazy garlic
Inch sized piece of ginger finely chopped or 1 tbsp of lazy ginger!
4 cups of rice or ( and I do this often!) 2 cartons of ready made rice from the supermarket
small can of sweet corn
small can or 2 handfuls of frozen peas- the little sweet ones -not mushy peas!!!
soy sauce
sesame oil
For the sauce -place in an empty container before you travel to save carrying everything in the van - just makes it easier -lasts for about 3 days.
2 tbsp of corn flour mixed with 8 fluid oz's of water
2 tbsp of either wine vinegar or normal vinegar-what ever you have
2 tbsp or 3 decent squirts of squeezy tomato sauce
1/2 small cup of fresh orange juice
1 glug of lemon juice
2 tbsp of soy sauce
3 sachets of brown sugar ( the type you "borrow' from the cafe or service station)
1/2 tsp of dried chilli flakes or 1 chopped chilli -just for a hint of heat.
Method
Place all the sauce ingredients in a bottle with a screw top or a plastic liquid container and shake vigorously to mix up. Put on one side for later
In a large pan or preferable a wok add a glug of oil and add peppers, garlic,onion. Lightly fry for about 5 mins.
Add the chopped chicken and stir fry until cooked -about 15 mins.
Add the ginger, pineapple chunks and the sauce mixture and reduce the heat if possible to very low. Its not always possible when using a tiny camping stove I know.
In a second pan ( or remove the above mixture when the juice has thickened and place in a bowl covered with tin foil to retain the heat) a glug of sesame oil , the sweet corn, peas and rice. Fry for approx 5 mins till heated through, Add soy sauce to taste.
Serve with the Chicken and enjoy your take away. Chop sticks are optional. We use them but sometimes they are thrown miles away and the fork option comes into play!
For none meat eaters we have had the above but with baby sweet corn, mange route and mushrooms instead of the chicken - very nice too!
