Portuguese Chicken Piri Pirii
So, the games continue!. Today sees USA
versus
Portugal
Surprisingly USA who are not really Soccer fans are doing well ( in comparison to England Anyway!)
So , what to cook, we cook do the American Ham burger - nah too BBQ ish me thinks. So lets have a go at Piri Piri Chicken ??
i have tried a few different recipes and even came back with the marinade last time I went to Portugal but this one seems to hit the spot.
4 large chicken legs/thighs with the skin on.
For the Piri Piri Marinade
6-12 fresh red chillies, depending on how hot you want it
3 cloves of garlic finely diced chopped
1 tsp salt
½ tsp oregano
½ tbsp paprika
100ml/3½fl oz olive oil
50ml/1¾fl oz red wine vinegar
Mix all the marinade together and rub into the chicken, score the skin for more of the flavour to be absorbed into the skin
Now, there are 2 ways of cooking this. COoking in a camper means place the chicken in a wok or frying pan and fry - keep turning , until cooked (about 15 mins each side) and at the last moment turn the heat up mega and crisp the skin
or place the chicken in to a baking dish, cover with foil and cook on gas 6 for about 30 mins , remove foil & the turn the gas up to high and cook 10 mins to get the skin really crispy ( not burnt!)
enjoy with a crisp salad and a glass of Portuguese wine- Vino Verde!
Don't forget this marinade can be used on most things including lamb and veggies!
