Pasta a la Bocca
This Pasta dish was inspired by the beach at Hellsmouth and so is called Pasta of the mouth!!
It is a dish that is simple but goodness me is it tasty??,. Sat on a beach in Italy would just make this perfect but we made do with the beach at Hellsmouth!!!
If you want to add a bit of “oomph” you can also add – at the tomato stage! A glass of red wine!
Ingredients
• 6 rashers of bacon – chopped up
• 12 cherry tomatoes
• 2 green chillies chopped
• 2 gloves of garlic – chopped
• 1 tin of chopped tomatoes
• 10 mushrooms sliced
• 20 black olives
• Packet of spaghetti
• Glug of oil
Method
• Place glug of oil in to the pan and add chilli & garlic – lightly fry for a minute
• Add the diced bacon and mushrooms and cook out 5 mins till bacon virtually cooked
• Add the cherry tomatoes – cut in half so they ooze their flavour into the sauce- plus the wine if you fancy it
• Cook for another 3 mins then add the tin of tomatoes & olives.
• At this stage put the spaghetti into a pan of boiling water and cook as per the instructions on the packet – I use quick cook spaghetti – just as it says on the packet it is “Quick Cook”
• Cook the sauce for an additional 5 mins until a lot of the juice /liquid has been absorbed.
• Drain the spaghetti and place in a large bowl, add the sauce and mix together
• Serve with grated parmesan cheese & a glass of vino collapso
• Finally – Enjoy!
