Greek Feta,pine nut and Spinach pie
This isn't totally ideal for cooking in a camper but if you have an oven in the van you need to try this. Otherwise you can try at home. I did this last night and it was beautiful. Lots left for pack lunch.
Method
Be warned this serves at least 6-8 people as you don't need a lot- its very filing but very lovely.
Some folk like to serve this with a chilled Greek wine such as retsina. me - can't stand it so had it with a chilled Australian Chardonay!!
- Ingredients.
500gm of spinach fresh
2 onions or 1 onion and bunch spring onions all chopped
handful of pine nuts
3 garlic cloves
250 gm of feta or "Greek style cheese"
250 ricotta cheese
jar of sun dried tomatoes
2 eggs
1 lemon
8 sheets of filo pastry
Method
Pre heat oven to 180 or gas 4
In a pan place a blob of butter with the spinach and cover with a pan for approx 3 mins to wilt.
Once wilted place in a tea towel and squeeze excess liquid- this is essential otherwise the pie is soggy and we don't do soggy!
Lightly fry the pine nuts,garlic and onions
In a bowl mix the cheeses ,eggs , spinach and lemon juice..
Add the lightly fried items and mix together.
In a greased cake tin (with removable bottom!) layer 1st piece of filo and brush with olive oil,. repeat with another 3 pieces .
Place the sun dried tomatoes on the bottom of the tin
The sides should be such that once the mixture for the pie is in the tin you can then cover with the pastry .
So, as said above , put the mixture in the middle of the cake tin on top of the tomatoes and spread evenly.
wrap the filo over the mixture then place the other 4 sheets on top of the mixture , brushing each one with olive oil.
Place in the oven for approx 30-40 mins.
Serve with a nice salad and new potatoes.
