Friday night is Fajita Night

Well Day two of the "cup". Mexico play Cameroon tonight so we are having a Friday Night fajita night. I know a lot of you now how to make this delicious Mexican dish but in case you don't this is how I cook it.


  • Take 3 chicken fillets and finely slice
    1 red, 1 green & 1 yellow pepper finely slice
    2 onions - yep you guessed it finely sliced
    Fajita seasoning - I use schwartz spices available from most supermarkets
    Oil
    Soft flour tortilla's
    Sour cream
    grated monteray jack cheese
    guacamole ( if desired)
    salsa


In the oil fry the onions and then add the chicken which has been tossed in the fajita seasoning
fry until nearly cooked ( about 10 mins - keep turning them)
add the peppers and cook another 4 mins approx

Warm the tortillas in either the oven or if "cooking in a camper" wrap them in foil and place on top of the wok you are using - the heat of the cooking fajita mix will warm them ( place in foil)

Get one of the warmed tortilla's and add shredded lettuce, salsa and cheese- add a dollop of the chicken and peppers and add sour cream if you want.

Carefully roll up the fajita and eat ensuring you get it all over your arms chest and favourite tee shirt! In our house ( and I blush when i say this) G eats his with a knife and fork!!!!! what on earth is all that about you ask but he is clean after his experience unlike Princess and myself who are covered in mixture!!
