Euro 2016 Wales v Belgium

Just so I don't appear too biased in the football , why not try a Belgium speciality with a twist.


Moules - speciality of Belgium but I cooked them in Belgium cider! rather than the obligatory white wine

You could mix it up with wales by using Conwy Mussels!!

Anyway here is the recipe for cooking in the camper van!!

In a pan place a good dollop of butter & fry off 1 large onion, 2 cloves of garlic & 6 finely diced slices of smokey bacon for about 3 mins until the onions are translucent and the bacon cooked
Place a bag of uncooked but well washed mussels- discarding any that are open or broken. into the pan - add 1 bottle of Belgiums cider- I am using a very famous one!!!!
Place pan lid back on and cook for about 4 mins until all the mussels have opened up!

To make this a bit more opulent! try adding 1/2 tub of single cream just before serving to make a rich sauce. My family personally like it without but it is very rich with :)
