Chipotle Chicken with Peach and Spring onion slasa

This is of our current favourites and the addition of the salsa makes it a very refreshing meal!


4 chicken breasts or a bag of cooked chicken if time is of the essence- chop as fine as you can - you want it small !
1 tbsp vegetable oil
1 medium onion-chopped
2 tsp sweet smoked paprika
2 tsp ground cumin
2 tbsp white wine vinegar
200ml pasata or a packet/tin of chopped tomatoes - up to you :)
2 tbsp soft brown sugar
1 tin of peach slices - chopped finely
5 spring onions chopped
8 small corn or flour tortillas
hot sauce - like this Chipotle sauce= see pic!



Method

Heat the oil and add the chicken,onions,- cook for about 10 mins until nearly cooked
Add the paprika,cumin,wine vinegar,tomatoes ,chipotle sauce and sugar.

Cook for an additional 5 mins

Wrap the tortillas in foil and place on top of the mixture and place lid on top - this will warm the tortillas on the hob!

Salsa

Chop the peaches and onions finely and add a dash of oil

Assemble!

Place some the salsa on the wrap, plus tablespoon of the chicken mixture and fold,.

Serve with a cold glass of mexican beer.
