Chicken,bacon and pesto with Spaghetti

Chicken and bacon with pesto

Ingredients

2 chicken breast fillets- cut in half
4 pieces of bacon – smoked is best, remove the rind and fat and roll out as thin as you can
1 jars of pesto (or make you own by mixing basil, pine nuts, olive oil and parmesan in the pestle and mortar)
Glug of oil to cook


Method

Place each ½ of fillet in a piece of cling film and roll out to as thin as you can
Spread a teaspoon of pesto over the breast
Next place the chicken on the bacon and neatly roll into parcels

Place in the frying pan with the oil and cook, turning regularly to prevent burning

They should take around 15 minutes to cook through


Serve with some nice sautéed potatoes or Spaghetti tossed in a tin of tomatoes with herbs
